Oxalate is an organic acid found in many plants and produced as a metabolic end product in humans. It can impact health in various ways, particularly with respect to kidney function and the formation of kidney stones. Humans derive oxalate both from their diet from foods such as spinach, rhubarb, nuts and tea and endogenously as a metabolic byproduct of glyoxalate. Excretion is primarily through the kidney in urine. 80% of kidney stones are composed of calcium oxalate. Hyperoxaluria, elevated levels of oxalate in urine can be caused by a genetic defect in glyoxalate metabolism or from dietary excesses of oxalate consumption or diseases which increase oxalate absorption.
