Chymotrypsin is a serine protease with a substrate specificity which targets peptide bonds on the carboxyl side of large hydrophobic amino acids like tyrosine, tryptophan and phenylalanine. Primarily produced by the pancreas, but also expressed in spleen and liver, chymotrypsin is generally secreted into the gut where it aids in the digestion of dietary protein. Conditions which interfere with its release, such as cystic fibrosis or cancerous tumors, which can obstruct pancreatic ducts and can have severe detrimental effects on health and well-being. Pancreatitis can involve the inappropriate activation of chymotrypsinogen leading to autodigestion of pancreatic tissue.
